Soy Sauce

Made from fermented soya beans, wheat flour, water and salt, soy sauce has a high salt content โ€“ not good for your blood pressure! There are two main types of soy sauce:

Light Obviously, light in colour but full of flavour, it is saltier than the dark variety and best used in cooking.

Dark This is aged much longer than light soy sauce, hence its darker colour. It is a little thicker and stronger too and is better for dipping sauces, and for adding colour to dishes as well as flavour.

Most soy sauces sold in supermarkets are the dark version, but Chinese stores sell both and usually the more authentic brands.
