Light Obviously, light in colour but full of flavour, it is saltier than the dark variety and best used in cooking.
Dark This is aged much longer than light soy sauce, hence its darker colour. It is a little thicker and stronger too and is better for dipping sauces, and for adding colour to dishes as well as flavour.
