One of the things that made the biggest impression on me in Jalisco was the incredible wealth of fresh cold beverages sold everywhere at street stalls. They are one of the real treasures of Mexican food. Actually, I had known a few examples from childhood. We used to love the cold sweet rice drink, Horchata de Arroz, and in summer my mother would make us save the seeds of cantaloupes and other melons so she could make another kind of horchata with the pureed seeds and a canela (Ceylon cinnamon) tea. That is delicious, too.
