Rice Flour

This delicate flour made from rice grains contains no gluten, so it cannot be used in bread making, but it is a fine thickener for oshes, khoreshes, puddings, and sweets, such as delicate rice cookies, a favorite in Iran. The flour is sold in supermarkets.
