Few scents are more characteristic of Iran than that of rose water: It freshens the air in mosques and other public places; it is a part of every woman’s makeup; and men use it as a cleanser for their mustaches and beards. Along with rose petals, it is a frequent ingredient in savory dishes and especially in pastries.

Rose water is sold at Persian groceries. If it is kept cool, its aroma lasts for years. See Rose section.
