Kaffir lime leaves (daun jeruk purut) are added whole to curries, or finely shredded and added to salads, giving them a wonderfully tangy flavor. They are commonly used in Indonesian and other Southeast Asia cuisines, and are available frozen or dried in Asian food stores. Frozen leaves are more flavorful than dried ones.
