Pandanus leaves impart a subtle fragrance and a green hue to a range of Indonesian dishes. They are usually tied in a knot and then added to a liquid recipe. Bottled pandanus extract can be substituted in desserts, but if fresh or dried pandanus leaves are not available, omit them from savory dishes. Vanilla essence may be substituted in dessert recipes.
