To pour a liquid from one container to another without disturbing the sediment that has settled at the bottom of the first container. The term is commonly used in relation to serving fine red wines however in this book it is applied to infused lemon oil, where the clear flavoured oil is poured away from the flavouring ingredients before storage or serving.
