  • About
A clear thick, viscous inverted syrup used in sweet preparations to prevent recrystallisation, particularly of boiled sugar. It is also used in some ice creams as it lowers the freezing temperature of the mixture and retards the formation of ice crystals but gives less sweetness than sugar.
