A thick, smooth substance made from fruit or vegetables, raw or cooked. Purées can be made in several ways, including liquidizing the food in a food processor, passing it through a fine sieve, a combination of these, or using a food mill or mouli-legumes. The term purée can also be a verb, in which case it refers to the action of making the food thick and smooth.
