White asparagus must have its coarse, rather bitter skin removed while green asparagus, generally speaking, is usually not peeled. To peel asparagus, lay each stalk on a board, holding the tip with your fingers. Using a vegetable peeler, peel down from the top while slowly rotating the stalk, taking care not to press down too hard with the peeler; the aim is to maintain the smooth, rounded shape of the stalk.
