Cornichons

Small pickled cucumbers often served with charcuterie. Their high level of acidity makes them suitable for sharpening the flavour of mayonnaise-based sauces such as tartare sauce, and the reduced meat stock sauce called charcutière that may accompany grilled pork dishes.
