This is among the most useful and time-saving pieces of cooking equipment. A mandoline is invaluable for making onion rings and slicing most hard root vegetables, including fennel bulbs. Always use the hand-held guard and position the bottom of the device on a folded damp cloth for stability, and be especially vigilant when slicing very hard vegetables like celeriac - excessive slicing pressure may cause the mandoline to move.
