Mouli is a French manufacturer of small kitchen gadgets, originally manually operated but increasingly power-driven these days. A Mouli-légumes is a mill for making purées of vegetables and is indispensable in any kitchen. At Bistro Moncur we have an original floor-mounted model that has been used twice daily for more than 13 years to make our potato purée. Every Mouli-légumes comes with three different gauges of grille, from coarse to fine.

A Mouli-julienne is designed to shred, slice and grate vegetables, nuts and hard cheese. I have one at home that I bought 20 years ago, and I still use it to produce perfect grated carrots for that very French salad of grated carrots seasoned with olive oil and lemon juice. Regretfully, I have not seen this model in stores for some years so it may not be available in Australia any more - keep an eye out for one at a garage sale.
