This classic spice mixture consists of allspice, cinnamon, nutmeg and cloves in the proportions 7 parts allspice to 1 part each of the remaining spices: pound the nutmeg and cinnamon quill with a mortar and pestle before grinding everything to a powder in a coffee grinder. Any unused quatre-épices can be frozen for up to a month.
