Farmed rabbits have a dressed weight of around 1.3-1.5kg and carry more fat than their wild relatives. As a result, their flesh is full of flavour and does not dry out as readily.
Hares are only available wild; the loins need to be cooked very rare but the legs require long, slow cooking to achieve tenderness.
