This very popular fish is sourced wild from Queensland and the Northern Territory, as well as being farmed in several states, principally Queensland. Wild barramundi can be as big as 8.5kg, while the farmed fish range from plate-sized up to 2.5kg. The flesh is white and medium-to-firm in texture, with a mild flavour and little oiliness, all of which contribute to its popularity - Australia exports large quantities of this splendid fish all over the world. At Bistro Moncur we generally buy large line-caught barramundi but occasionally we serve plate-sized farmed fish, the flavour of which has improved dramatically in recent years.
