Globe Artichoke Hearts with Spinach & Hollandaise Sauce

Allow 2 warm, cooked artichoke hearts per person. Fill with hot spinach purée and coat with Hollandaise Sauce then put into a hot oven for 5 minutes to set the sauce. Serve with roast fillet of beef or pan-fried fillet steaks.
