An active cook who works in the kitchen during preparation periods and during service. Also responsible for ordering and other designated administrative duties. Reports to the Executive Chef. In a very large hotel, the Executive Chef may have many more administrative duties than a Chef de Cuisine. In smaller establishments, the Chef de Cuisine may also be the Executive Chef.
