In a convection oven, a fan blows hot air through the oven, allowing food to brown more efficiently than in a conventional oven. Often used for pastries and baked goods. Allow a minimum of 15 minutes to preheat to temperature. If a recipe is written with a temperature designated for a conventional oven, the temperature in a convection oven should be lowered by 10 percent.
