Just enough cold liquid should be added to the pot to cover the solids by no more than 2 inches. Additional liquid is required only when the amount falls below the top of the solids. Beginning with cold water and very slowly bringing it up to and maintaining a gentle simmer helps create a clean, clear, and tasty stock.
