  1. Finely dice (ciseler) onions and dice bacon.
  2. Combine the onions and bacon in a large sautoir over medium heat. Cook until the bacon renders some fat and cooks slightly.
  3. Stir in the breadcrumbs to absorb excess fat.
  4. Add chopped fresh thyme and sage.
  5. Season with salt and pepper to taste, and if necessary, adjust the seasoning.
  6. Proceed to use as a stuffing in a specific recipe.
