- Finely dice (ciseler) onions and dice bacon.
- Combine the onions and bacon in a large sautoir over medium heat. Cook until the bacon renders some fat and cooks slightly.
- Stir in the breadcrumbs to absorb excess fat.
- Add chopped fresh thyme and sage.
- Season with salt and pepper to taste, and if necessary, adjust the seasoning.
- Proceed to use as a stuffing in a specific recipe.
