Requisitions and Transfers: A requisition sheet is a form filled in by a member of the kitchen staff that lists the food items along with the quantities required for the day’s production. The storeroom staff fulfills the requisition and transfers the requested items from the storeroom to the kitchen.
If the items are not available directly from the storeroom (for example, liquor may be required from the bar), it may be necessary to complete a transfer form. In large restaurant operations, a transfer form may be required to transfer items from one kitchen unit to another.
