Financiers are one of the great classic French petits fours. Traditionally a flourless tea cake (usually made with crushed almonds or almond flour), with a texture somewhere between a sponge cake and a moist cookie, financiers have recently experienced a renaissance in the contemporary pastry kitchen. Financiers are also known as friands, or “small delicacies,” and may be topped with fruit, berries, or crème Chantilly. They are often used as an accompaniment to ice creams or other frozen desserts or as a component in elegant, plated restaurant desserts.
