In late autumn, eviscerate fattened birds, wash, and wipe dry. Tie up the birds in pairs, dip in water, and immediately hang in a cold place where they will freeze. Repeat several times. After the birds have frozen solid, arrange them in boxes and sprinkle with snow. A bird, frozen in this manner, may be kept all winter.
