Lately I’ve begun using a new method for making patties that I call “hand smashing.” When you want thin patties but can’t smash them thin (in a pan), try hand smashing. The method works well for grilling thin patties or making Jucy Lucys without a patty press. All you need to do is invest in a pack of precut parchment squares. I’ve found that 8" × 8" is the perfect size, and I use them all the time. You can also pre-smash a stack of patties, throw them in the fridge, and be prepped and ready to make burgers inside or out.
