You often hear people say that white chocolate isn’t real chocolate. This is partly true because it doesn’t have any cacao solids—that’s why it’s white. If, however, it contains 20 percent or more cacao butter, it can be called white chocolate. You can buy white chocolate in chips or purchase larger packs available to pastry chefs at select online retailers.
