These recipes usually call for vanilla extract. I always use organic high-quality pure vanilla extract. But a few recipes call for a vanilla bean. (See Note: Using Vanilla Beans.) Vanilla beans offer a more intense vanilla flavor, but if you donโ€™t have a vanilla bean, you can substitute 1 tsp vanilla extract for 1 vanilla bean.
