Of the many varieties, the Violetto di Sicilia is the most exquisite, presenting a deep violet or deep green ‘head’. This cauliflower is less substantial than the white varieties and is steamed, or boiled at speed, then dressed while hot with olive oil and a few drops of wine vinegar.
