Chanterelles cannot be confounded with any poisonous fungi, are innocuous and have their own woodland fragrance. You look for them in silver birch and Spanish chestnut woods in early autumn.

This recipe comes from Les Secrets de la Cuisine Comtoise by Pierre Dupin, 1927, a book given to me by Irving Davis. It had been presented to him with the ‘cordial hommage’ of a Franc-Comtois.
