The specific name oreades means mountain nymph. Found in summer/ autumn growing in rings, this small and abundant fungus develops its flavour when dried, and is thus used in winter soups and stews, for instance in a Catalan dish of pig’s trotters and carrots slowly cooked in the oven in earthenware.
