Receives only a moderate rating, unlike the wonderfully perfumed white truffle of Alba, T magnatum. Once well brushed and wiped, its aroma can be trapped for a time in vi ranci or cognac, in a small glass jar with hermetic closing. Treat in the same way as the black truffle, or slice finely into perfectly fresh scrambled eggs.
