Some wild mints: M sativa, l’herba sana (Catalan); M arvensis, corn mint, menta selvatica (Italian); M piperita, peppermint, peperina (Italian); M spicata, spearmint; M aquatica, water mint; M pulegium, pennyroyal, poliol (Catalan), menta romana (Italian).
M piperita, the mint much cultivated in gardens, is a cross between M spicata and M aquatica according to Grigson.
I have already mentioned a sprig or two of wild mint, usually corn mint or pennyroyal, boiled in a dish of weeds. Both plants (leaves and flower spikes) can be used in infusions, fresh or dried; see also the infusion of fresh mint leaves.
