Wild juniper thrives on calcareous soils, on chalk downland, on the slopes of the Apuanian mountains, in oak woods in Tuscany and on the foothills of the Alps, and in the wild mountains of Greece.
The blue-black fruits, used to flavour gin, are also responsible for the aroma of Ginepro, one of the best Italian liqueurs.
Uses in cooking. They have a tenderizing effect when pounded with a few allspice and peppercorns and applied to pieces of beef before cooking them en daube. Indispensable when cooking pork, wild boar or hare.
