Also known as carom seeds, ajwain smells almost exactly like thyme because it contains thymol. However, it is more aromatic and less subtle in taste as it is slightly bitter and pungent. Even a small amount can dominate the flavor of a dish, so use it sparingly. Ajwain is also valued for its antiflatulence properties.
