This spice, which has a distinct lemon flavor, is used extensively in Southeast Asian cooking to add a very distinct flavor and aroma to dishes. Curry leaves are not related to curry powder at all. They are the leaves of the curry plant or tree, Murraya koenigii. They are used in a variety of soups, stews, chutneys, and sauces. Although they vaguely resemble bay leaves, curry leaves can be eaten and need not be removed from the dish before serving.
