These hot red peppers are sun-dried before use. Different regions of India grow and use their own type of red chiles—Kashmiri chiles in Kashmir, begdi in Karnataka, guntur in Andhra Pradesh, etc. We have used Kashmiri dried red chiles in most of our recipes because they are not too spicy and they impart an appetizing color to dishes.
