You will always find a bag of chopped mixed frozen vegetables in my freezer. They’re brilliant to add to simple meals like pasta to bulk it out and add some nutrients. Frozen veg is usually cheaper than fresh and, of course, doesn’t go off quickly, so it’s a great way to cut down on food waste and save you money.
As well as mixed vegetables, I also keep a bag of peas and sweetcorn in my freezer too, either to add to recipes or to serve up on the side.
Several of the recipes in this book use frozen diced cauliflower. I show you how to make your own, but you can also buy packs of ready-diced frozen cauliflower too.
