You will see me mention flash freezing in several recipes. Do not skip this step! It will prevent foods like chicken goujons, muffins and cookies from sticking together when frozen. I use a specific tray or plate for this (see previous page). It will take a maximum of 1 hour for the foods to get hard and they can then be transferred into freezer bags or containers.
