Beni shoga is used in small amounts—no more than a teaspoon or two—to garnish Hiyashi Chuka, Yakisoba, and in some types of ramen. The vinegary ginger provides a nice contrast to the richness. It is also sometimes mixed into the batter for Okonomiyaki and Takoyaki.
