Hot chili oil (rayu) is a popular condiment made by adding small red chili peppers to a neutral vegetable oil. It’s great for jazzing up Chinese-inspired dishes like Ebi no Chiri So-su, Mapo Dofu and ramen. Many supermarkets carry chili oil.
