An inexpensive grater (oroshi) is used for preparing ginger and daikon. The graters come with different-sized rasps, depending on what you are grating. Many of my recipes call for grated ginger, so the fine-rasp ginger grater, which comes in ceramic, metal, or plastic, is particularly useful. The ceramic one is especially nice because it has a moat around the edge that captures all of the tiny grated pieces and the valuable juice.
