While most recipes in this book call for garlic cloves, it’s important to know how to mince garlic. To do this, crush garlic cloves with the bottom of a measuring cup to loosen the papery skin so it’s easier to remove. Peel carefully using your fingers. If the peel is still not budging, you can use a small knife to help. Once peeled, place the garlic on a cutting board. Place one hand on the handle of your knife and the other on the top of the blade and begin to chop finely (into thin slices), making sure to trim the edges of each clove. You might find that some garlic pieces get stuck to your knife as you are cutting, so carefully wipe the sides of your knife between cuts.
