The bread ones are cut different shapes and fried in clarified butter.
Preparation of rice for cushion
Wash the Patna rice, blanch for 5 minutes, drain, and wash again in hot water. Place it in a pan lined with fat bacon, add some alum, cover with more slices of fat pork, and cook slowly for 5 hours. Pound and work in a greased serviette and moulded in a greased recipient. When cold, shape to taste and keep in alum water.
