Consommé of beef, chicken and turtle, flavoured with turtle herbs, thickened with arrow-root, garnished with dice of turtle, collops of turtle fat. Madeira wine. (English).

Turtle herbs.–Basil, marjoram, sage, rosemary, thyme, coriander, peppercorns, bay leaves in infusion.

Milk Punch–Syrup at 17° with juice and zest of oranges and lemons, rum, kirsch, milk, strained and served very cold.
