Soles and Fillets of Soles: Claudinette

Filleted, folded and poached with mirepoix, white wine tomatoes, chopped parsley, reduced and mixed with lobster cullis. Dressed in paper cases on a Joinville garnish, coat with sauce, cover with another paper case, and put in oven before serving.
