Filleted, cooked in butter, dressed in half egg-plants fried in oil and stuffed with gratin forcemeat made with the egg plant, tomatoes, duxclles, chopped onions and shallots, garlic. Sprinkle with crumbs and set to gratin. Meunière butter.
