A great gluten-free alternative to regular flour, this pantry staple is made by grinding raw almonds. Various grades are available. Almond flour, as shown here, is made by finely grinding almonds that have first been blanched to remove their brown outer skin; almond meal is coarser in texture and darker in colour, as the skin has not been removed prior to grinding.
