Used in almost every curry in small quantities, turmeric, a rhizome from the ginger family, adds a beautiful yellow colour and is a good substitute for saffron. Ground turmeric is mildly aromatic with a pungent, bitter flavour, and gives spice blends their signature golden hue. Turmeric can also be used fresh.
