Named for its foetid aroma, and also known as hing, asafoetida is the dried resinous sap of a variety of giant fennel, and comes in powder or lump form. Cooked, it has an onion-like flavour, and is especially prized by those who refrain from eating onion or garlic, such as the Jains and Hare Krishnas.
