An Italian dish of boiled meats such as cotechino, zampone, beef, veal, chicken and tongue. Bonne femme Dishes cooked in the traditional French "housewife" style. Chicken and pork bonne femme are garnished with bacon, potatoes and baby onions, fish bonne femme with mushrooms in a white wine sauce.
